I have been working with a local chocolate company in Utah, Fernwood Chocolates, to create some delicious recipes for their famous mint chocolate sandwich chocolates. They have been in business since 1947 and they hand make all of their amazing chocolates. Since I used to hate chocolate {weird I know} I prefer eating chocolate with either mint or caramel. I absolutely loved these chocolates and the first thing that I noticed about them is they didn’t have a waxy taste to them. They were delicious and smooth with a perfect mint center. It’s a good thing that I had a recipe to make or I may have eaten them all one by one!

Lets talk about these brownies. The brownie base cooked perfectly flat and were perfectly chewy. The bits of the mint sandwich baked inside were a huge added bonus for the mint chocolate lover that I am. Then I used the chocolates for the frosting on top and mint was swirled throughout. These brownies looked gorgeous! I baked them at my blogger BFF’s house  who is not a mint chocolate fan. I made her try some with me and even she loved them! They are just that good my friends! These brownies are a recipe that everyone will love!

Mint Sandwich Brownies

A deliciously chewy brownie with mint sandwich bits inside and frosted with amazing mint chocolate. Rating: 5 stars
Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes
Servings: 12 Servings

Ingredients 

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1/2 cup cocoa
  • 1/4 teaspoon salt
  • 1 cup chopped mint sandwich chocolates Fernwood 14 oz box worked great
  • 6 oz mint sandwich chocolates about 30

Instructions 

  • Preheat oven to 350. Grease a 9x13 pan and set aside.
  • In a mixing bowl combine together flour, cocoa, and salt. Set aside.
  • In a medium saucepan melt butter on low. Whisk in sugar and vanilla. Remove from heat and add the eggs.
  • Combine wet ingredients to the dry ingredients and blend. Stir in 1 cup chopped mints.
  • Bake 35-40 minutes and immediately coming out of the oven, place reserved 6 oz fernwood mints on top. Let sit for 5 minutes and smooth the melted chocolate on top like frosting. Let cool and serve!
