Grilled Honey Balsamic Chicken

Just four more days. I only have four more to go until this little girl gets here. The last part seems the longest! I have spent the day nesting and I am trying to get everything ready as much as I can in these last few days.

I still feel like I have so much to do and get our hospital bags packed. But you can only so much when you are this close to the end. So I think I will sit down with my feet up and write this post. With some Dove chocolates of course. 😉

I love easy to grill recipes with great flavor. I wanted to make something that would taste amazing and that my kids would also enjoy.

I have made a similar honey balsamic pork recipe that is hands down my favorite. So I decided to marinade the sauce in some chicken and throw it on the BBQ! The chicken was cooked to tender perfection, and the glaze was to die for. This recipe was a huge success!

Chicken Breast and marinate combined to show chicken marinating in the sauce

How do you make Grilled Honey Balsamic Chicken?

  • In a ziplock bag, add chicken, olive oil, salt, pepper, paprika, and onion powder. Make sure the chicken is completely coated in the seasonings.
  • In a small mixing bowl, whisk together honey, balsamic vinegar, ketchup, and garlic. Pour half of the sauce into the bag and let marinate for at least 30 minutes.
  • Grill your chicken on each side about 3-4 minutes or until no longer pink.
  • Place reserved sauce in a small saucepan and allow to deglaze for 2-3 minutes over medium high heat. Brush sauce on top of chicken.

What temperature is chicken cooked to?

The safe internal temperature for cooked chicken is 165° Fahrenheit (75° Celsius). A meat or instant-read thermometer is your best bet for determining the temperature of your chicken. Insert into the thickest part of the chicken breast for the most accurate reading.

Can you bake this in the oven?

Yes! If you do not have a grill, this will bake well in the oven. After marinating, preheat your oven to 350 degrees Fahrenheit. Place chicken on a pre-lined baking sheet or lightly spray the baking sheet. Bake for 25 to 30 minutes or until the chicken is cooked through.

Can you make Grilled Honey Balsamic Chicken ahead of time?

Yes! This is great to combined and marinate overnight until cooking. The longer it is marinated the more rich flavors and tender the chicken will be!

Can you substitute thighs for chicken breasts?

Yes! This will be a great substitute. Continue with the same recipe with chicken thighs instead of chicken breasts!

The flavor of the freshly grated ginger came through wonderfully. Just the right amount. I was out of the dry mustard so just left it out. I had some freshly made chicken broth, so used that instead of the water. The guys ate a lot of wings!!

Delicious! I used boneless chicken thighs and breasts. Added a little cayenne, chipotle chili pepper, and smoked paprika. Marinated for thirty minutes. SO GOOD. The thighs were the biggest hit. Thank you for creating this recipe!
