I am obsessed.

I am obsessed with all things chinese food and cashews. One of my favorite recipes on the blog is this slow cooker cashew chicken. I made it last week and I was reminded of how amazing it is. I decided to make another favorite slow cooker chinese recipe on the blog. But I added cashews. I think everything is better with cashews!

This is the best beef and broccoli recipe that you will make. I promise. Not only is it awesome that it is made in your slow cooker, but it has the best flavor. There is also something about the beef that is cooked all day in the crockpot. It melts in your mouth. That combined with delicious veggies and cashews will blow your mind!

If you make anything from the blog and love beef and broccoli, you have to make this. This recipe is a winner! The sauce is amazing. The beef is amazing. And the veggies are amazing in it. Add some crunchy cashews and you have the perfect meal! I know that your family is going to love this as much as we did!

Slow Cooker Cashew Beef and Broccoli Stir Fry

Cook Time: 6 hours
Total Time: 6 hours 10 minutes
Servings: 4 Servings

Ingredients 

Instructions 

  • In a mixing bowl, whisk together the beef consume, soy sauce, dark brown sugar, sesame oil, and garlic.
  • Lay the beef strips in the crockpot and pour the sauce over, tossing the strips to coat.
  • Turn the crockpot on low and cook for about 6 hours. You don’t want to cook the beef too long or it will start to shred.
  • When it is just about done, take 4 Tbsp of the sauce and whisk it in a small bowl with the cornstarch. Slowly stir this into the crockpot. Add the broccoli, cashews and carrots and stir. Cook an additional 30 minutes so that the sauce can thicken and frozen broccoli and carrots can cook. You don’t want to add the broccoli until the very end or it will be mushy. If you are using fresh broccoli, steam before or add about an hour before it is done cooking to heat through.
  • Serve over rice and enjoy!

    This was so easy to make, and my whole family loved it! They are picky eaters, too! I used a pkg of chuck roast stew meat, so it was already cut up. Thank you for such a great recipe!

  2. This looks delicious. Want to try it but don’t have a crock pot.

    What could be an alternative?

    Is pressure cooker an alternative?

    And how will we then adjust the cooking times?

    1. Yes, you can use a pressure cooker instead. Sauté your beef first in the pressure cooker. Then lock it in with the whisked sauce on high for 12 to 15 minutes. Release and let the steam out slowly. Once ready to eat, serve warm.

  3. Have yet to try this recipe but it looks AMAZING!!
    I would prefer to use FRESH broccoli and carrots. At what point would you suggest I add them to the slow cooker?
    Open to suggestions here…..

  6. This was a hit with my family! My husband declared it restaurant quality.

    Despite my best efforts, the beef did get to the shredded stage, but no one seemed to care. Next time I will use more beef (maybe up to two pounds) and add a bit more corn starch, as my sauce wasn’t that thick. Thanks for a terrific recipe!

  7. Question really, what can I use as a substitute for brown sugar, can I just add a small amount instead?
    My husband is on a restricted sugar diet. we use Splenda, however the same taste (obviously) cannot be achieved with this, so please help me..
    We just purchased a “Hot Pot 2 months ago and having a lot of fun with it , the only thing is, I can’t find slow cooker recipes for it’s slow cooker mode.

    1. You may try mock fruit which is a sugar substitute, I have used it in some recipes and the taste was not altered.

  8. Thanks for this recipe, I’m going to try it tonight! I may marinate the beef and use 2 lbs. of meat, but that’s just because I like less sauce.

    One suggestion may be to add what size slow cooker you are using. I can gauge from experience with mine (it’s a six quart) whether or not I need to upsize/downsize recipes for best results, but others may be fairly new to crockpot cooking.
