I have some exciting news to share with you today along with my all time favorite salad. We are expecting our fourth child. I am due in just about 7 weeks! All of my pregnancies have been so easy without any complications and this one has defiantly thrown us for a loop. I have waited to announce because there have been a lot of complications early on with this pregnancy.

We know that this one is our last and so we wanted to make the gender reveal fun and special. I was able to find out at 13 weeks what we were having. My friend made a gender reveal cake. We gathered friends and family over for a big party. When we cut into the cake it was….. PINK!! We are adding another sweet little girl to our family. We are especially ecstatic to have two older boys and then two younger girls.

The good news is that all of the complications early on in my pregnancy were gone at the 20 week ultrasound and I have had no problems since. They were able to find a perfect and healthy little girl and we are so excited to have her join our family shortly.

I am sharing this salad with you today because all of my pregnancy cravings are rolled up inside. This is hands down my all time favorite salad! I knew that this was another girl because my pregnancy was exactly the same. And I crave fruit like no other! I can’t seem to get enough fruit and our fridge is always full of it. And then I also crave avocado and pistachio nuts. So it is no surprise that this is my favorite salad!

I love this salad because it is is the perfect meal in one. You have your vegetables, fruits, and protein all rolled up into one. There are so many flavors and textures that really come together to make this salad out of this world.

I honestly could eat it every day!

  • In a large bowl combine chicken, romaine lettuce, strawberries, blackberries, and avocado. Toss gently. Top with pistachios, feta cheese and drizzle with creamy lemon poppyseed dressing.
  • How to make creamy lemon poppyseed dressing: In a small bowl whisk mayonnaise, milk, sugar, cider vinegar, lemon juice and poppyseeds.

    Love this reicpe. I’ve made it over and over again. I use walnut instead of pistachios, Greek yogurt instead of mayo, and splenda instead of sugar. I think next time I’ll mix in some arugala as well.

    great salad. a bit of spicy seasoning on the chicken was nice counterpoint to sweet berries.
    even the men in my family loved it for supper.

    I’ve made this twice. My family loves it. The first time I made exactly as written. The second time I substituted raspberries for the blackberries and olive oil instead of mayo. Also, maple syrup for sugar. Very versatile.
