I have had so much fun this month working with Kroger on their Little Victories Campaign. I have learned to set realistic goals and I have been able to make healthier food choices and swap out everyday ingredients. This month I have been creating recipes that are just as delicious with better for you food swaps. I have learned that you don’t have to compromise on taste and eating better can be quite delicious and rewarding!

Kroger was so nice to send us a FitBit at the beginning of the year. I have always wanted one and couldn’t wait to use it. I love it and wear it everyday. I have been able to track the calories that I burn during each workout. It also records how many steps I am taking and helps me to reach my goals. With making better food choices and working out I have been able to lose…. Drumroll…. 15 pounds in just five weeks!! This is a huge victory that has been able to be achieved through hard work. It is the best feeling to finally shred those last baby weight pounds and I feel great! It gives me the motivation to keep pushing on. It is the BEST feeling ever! 🙂

I can continue eating so many of my favorite foods I just have to swap out better for you ingredients. One of my favorite finds of the month is this Greek Cream Cheese and Greek Yogurt. It is amazing!! I use so much cream cheese throughout the year and this Greek Yogurt Cream Cheese is so much better for you. The taste is just as delicious and creamy. But it has twice the amount of protein and half of the fat!

Spinach Artichoke Dip is hands down my favorite dip. I created an amazing dip with this greek cream cheese that added so much creaminess and held everything together. I couldn’t believe how incredible the flavor of this dip is. All of the cheeses combined to make this simple yet crowd pleasing dip.

With the big football game coming up, I feel like spinach artichoke dip is a must! This is one dip that you can make and you don’t have to feel guilty about. You can still have an amazing gathering with delicious food, just continue to make healthy food swaps.

I hope that you will continue on with your goals that you made at the new year. Don’t be the 90% that has already given up on their goals. I have loved working this month with Kroger. It has helped me to make more realistic goals that I can continue throughout the entire year. It feels great to reach these little victories.

Skinny Three Cheese Spinach Artichoke Dip

Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 6 Servings

Ingredients 

  • 6 ounce Kroger® Baby Spinach chopped with stems removed
  • 14 ounce Kroger® Artichoke Hearts quartered drained and chopped
  • 8 ounce Kroger® Greek Cream Cheese with Greek Yogurt
  • 1/2 cup Kroger® Lowfat Greek Yogurt
  • 1/2 cup Kroger® Lite Mayonnaise
  • 1 1/4 cup Kroger® Mozzarella Cheese divided
  • 1 1/4 cup Kroger® shredded parmesan cheese divided
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions 

  • Preheat oven to 375 degrees. In a medium sized mixing bowl, combine spinach, artichoke hearts, greek cream cheese, greek yogurt, mayonnaise, 1 cup mozzarella cheese, 1 cup parmesan cheese, garlic, and salt and pepper. Mix until combined.
  • Place in an oven safe dish and top with remaining cheese. Bake for 20-25 minutes until heated throughout and bubbly. Serve immediately.

    This dip sounds amazing aside from the fact that I cannot eat Parmesan cheese. I have a terrible allergic reaction to it, as well as romono cheese. Can you tell me another cheese that I could substitute? I absolutely love spinach/artichoke dip but can’t eat it at any restaurant and haven’t been able to find a recipe for it that doesn’t call for parmesan.

  5. My little victory is not letting an occasional lapse of emotional eating discourage me after months of healthy eating. And even though I didn’t want to, I recorded that extra handful of granola, the 8 Swedish fish and 2 Twix Bites in my food journal.
