Beef and Cabbage Soup

We have had quite the mild winter here in Utah. Hardly any snow! And last week, we got dumped with snow. And I am talking about 16 inches of snow up at our house. We live close to the mountains and tend to get more snow at our house. It looked so beautiful!

There is nothing that I love more than a bowlful of soup for chilly days. Soup is the perfect winter meal to keep you warm on the coldest winter days. And today I am bringing you a hearty and flavor-packed soup. With the help of Kitchen Basics beef stock, I was able to create a hearty and flavorful soup. They have a variety of stocks and bone broths that are perfect for your recipe creation!

What is in beef and cabbage soup?

This soup has ground beef, cabbage, carrots, celery, kidney beans, and diced tomatoes. So many delicious vegetables are included in this hearty soup.

How do you make beef and cabbage soup?

You start by browning the ground beef and draining the grease. Then you add in the vegetables and beef broth. Bring it to a boil and reduce to simmer for an hour to let the flavors blend and the veggies to become tender.

Can I make Beef and Cabbage soup in the slow cooker?

This soup also works great in the slow cooker. Just add the browned ground beef and all of the veggies and broth. Let it cook on low for 3-4 hours or until the vegetables are tender.

Ingredients 

Instructions 

  • In a large pot or dutch oven, add the ground beef and brown. Add the garlic, and salt and pepper to taste. Add chopped cabbage, diced tomatoes, celery, carrots, kidney beans, broth, and Italian seasoning.
  • Bring to a boil, reduce heat, and let simmer for an hour. Garnish with parsley if desired.

  1. I made this thinking it was going to be delicious, but I must’ve did something wrong. It taste so bland. Please help me figure out what to add or what I need to do different. I made this in a slow cooker. It’s halfway done.

  2. I saved this recipe and plan to make it. I look at recipes and check the ingredients for healthy options.I was astonished at the sodium content listed and wonder if that number is a misprint as they say. Forty nine thousand milligrams!!! It seems like a 3 cup carton of the beef broth would be somewhere around four-six thousand milligrams. I could be wrong. I am not a nutritionist but I know 49 thousand milligrams of sodium Is not something that would be healthy to eat.
    I thank you for the delicious recipe. I just wanted to share my thoughts.

    I am just trying this. I followed the recipe except I didn’t have a can of kidney beans. I grabbed what I thought was a can of white beans but after I stirred it it I realized it was white chili beans!
    I guess I’ll have to wait until I serve it tonight, with Famous Dave’s corn bread and see what everyone says.

    Great soup but I can’t believe there is that much sodium in it! Big portion of soup too. Very satisfying on a cold winter day.

    1. I forgot to mention that in my post. I normally do not salt anything I cook. I leave it to each person to decide. That is the highest salt content I have ever seen!!
