Spicy Kielbasa Dip

  • 1 pound smoked kielbasa, diced
  • 2 cans (10.5 ounces EACH) Ro-tel with diced green chiles
  • 1 can (15 ounces) chili beans
  • 1 can (15 ounces) black beans
  • 1 package McCormick Chili Seasoning
  • ½ of 1 full can (4 ounces) diced jalapeños, or add to taste
  • 1 package (8 ounces) cream cheese, full fat
  • 2 cups freshly shredded cheddar cheese
  • Optional toppings: green onions, fresh cilantro, bacon bits,salt and pepper
  • Dip with: red peppers, tortilla chips
  1. In a nonstick skillet, sauté the kielbasa until browned.
  2. Transfer to a small crockpot. Add in the very well drained Ro-tel, undrained chili beans, and rinsed + drained black beans.
  3. Add in the chili seasoning and jalapeños to taste.
  4. Cover and cook on high for 1 and ½ to 3 hours or until hot.
  5. Cube the cream cheese and then soften in the microwave. Add to the crockpot and briskly whisk (with a whisk) until completely smooth.
  6. Stir in the cheddar cheese. Cover and cook until the cheese is completely melted.
  7. If desired top with fresh cilantro and green onions. Season with salt and pepper if desired.
  8. Enjoy with chips and red pepper strips.
