I have been a huge fan and follower of Our Best Bites even before I started a blog. They have such amazing  family friendly recipes and cookbooks. Sara has such an inspirational story of losing 50 pounds! {You can read all about her story here.}  She looks amazing!! And if you have been following along I started my weight loss journey last December. I loved hearing about her weight loss story and our plans were both similar to losing weight.

I had to lose my baby weight. I was miserable and wanted to feel like myself again. Since December I have lost  all baby weight (close to 30 pounds) and maintained the same weight now for 5 months. A huge part has been keeping active by doing Crossfit 4 times a week and logging in all of my food with My Fitness Pal. I also check in with the nutritionist at the gym weekly to keep me on track.

People ask me what I eat. I eat real food. You don’t have to sacrifice on taste to lose weight. Portion control and adding in whole grains has been huge for me. I also reward myself with a cheat meal each week. So I am totally eating those recent brownies and everything that goes up on the blog here.

I was ecstatic about this new cookbook because I could add in some more healthy dinner options that don’t compromise on taste and help me to maintain a healthy lifestyle. And it is important to keep healthy recipes throughout the year. Especially during summer and swim suit season. 🙂

I chose these Herbed Lemon Garlic Chicken Skewers because they use minimal ingredients but the fresh herbs and lemon garlic added such an amazing flavor. It is perfect for summer to throw onto the grill. They grill up in no time and have fresh and bright summer veggies included.

The flavors all came together so well and were a huge hit with the family. It just goes to show that you can still maintain a healthy lifestyle and eat delicious food that the entire family will love! This is the perfect summer meal and I know your family will love it too!

Herbed Lemon Garlic Chicken Skewers

Fresh lemon, herbs, and garlic come together in this fast and flavorful marinade. Complemented with fresh and bright summer veggies in this amazing meal that is under 400 calories!

Cook Time: 15 minutes
Marinate Time: 30 minutes
Total Time: 55 minutes
Servings: 5 Servings

Ingredients 

Marinade:

  • 1 1/2 tablespoons garlic finely minced
  • 1 tablespoon fresh lemon zest
  • 4 tablespoons lemon juice freshly squeezed
  • 1/2 cup minced fresh herbs I used a mix of basil, rosemary and oregano
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 tablespoons extra virgin olive oil

Skewers:

Instructions 

  • In a small bowl combine garlic, lemon zest, lemon juice, herbs, salt, pepper, and olive oil. Set aside.
  • Place cut vegetables in a zip lock bag and add 3 tablespoons of the herb marinade. Toss to coat. Place chicken in separate bag and add remaining marinade and toss to coat. Let sit in the fridge for at least 30 minutes and up to 4-6 hours.
  • Preheat the grill to medium heat. Thread the skewers alternating with meat and vegetables. Lightly sprinkle with salt and pepper. Grill for 3-4 minutes and then flip. Continue to cook and flip when necessary until the chicken is cooked through to 165 degrees.
  • Serve with lemon wedges and squeeze on top.

    1. Yes, you can bake them at 350* for about 20-25 minutes. I haven’t tried it so you will have to let me know how they turn out!! Happy baking! XOXO

  1. Great recipe! Made it over the weekend for a lunch BBQ and it was perfect! Wouldn’t change a thing. I had some eggplant from the garden so I added that and it was a great addition.
