We grilled this up on Saturday and it was amazing. The chicken was so flavorful and moist. And anything wrapped in bacon is always better right?? Although my hubby does have some mad grilling skills. I loved this recipe because most of the chicken I make has some kind of marinade. This chicken was so good with the spices and bacon, it was perfect by itself! I served it with my delicious Rodizio Grilled Pineapple and a yummy pasta salad.

How I changed it:   I let the chicken soak in the brown sugar and spiced overnight.
Things I may do differently next time:  Add a little more spice. Maybe some red pepper flakes.
Will I make it again?  Yes!

Sweet and Spicy Bacon Chicken

I loved this recipe because most of the chicken I make has some kind of marinade.

Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients 

Instructions 

  • Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine {I skipped this since I grilled them. I honestly think you could coat your dish with nonstick cooking spray instead to save a few calories}.
  • Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.

  1. Alyssa, you mentioned that you used the grill instead of oven. Please share the alternate directions for grilling.

  2. This was excellent as promised. Baked in a glass baking dish that was coated in olive oil. Omitted the chili powder as I have three kids under 5, and it makes me nervous to use that spice. Did not season overnight. Sprinkled some brown sugar on top before baking. Chicken was moist and flavorful. This website is very, very reliable! I have made several recipes that turned out great . . . Slow cooker beef and broc, spinach and artichoke come to mind. Thanks!
