Wash and scrub 4-5 small russet potatoes before thinly slicing them almost all the way through, leaving half an inch intact at the bottom of each slice. Season with salt and ground black pepper.
Combine ½ cup melted unsalted butter, 1 teaspoon finely chopped fresh parsley, 1 teaspoon finely chopped fresh thyme, 1 teaspoon finely chopped fresh rosemary, and 3 teaspoons minced garlic in a small bowl.
Place the potatoes in the bottom of the air fryer basket. Brush the garlic herb butter over the top of the potatoes.
Air fry at 360 degrees Fahrenheit for 15-20 minutes or until tender.
