Trim the fat from 2 pounds pork tenderloin and and season it with salt and pepper on all sides of the tenderloin.
In a small bowl whisk together ¼ cup olive oil, 2 tablespoons Dijon mustard, 2 tablespoons honey, and 3 cloves minced garlic. Reserve half of the sauce for later and set aside. Brush the remaining sauce on the pork.
Preheat the grill to medium-high heat and add the pork to the grill. Cook for 5-6 minutes on each side or until the pork reaches an internal temperature of 145 degrees Fahrenheit.
Brush remaining glaze on top of pork and serve with fresh parsley for garnish, if desired.
