Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Add 1 ¼ cup dark brown sugar, ¾ cup granulated sugar, ¾ cup evaporated milk, and ¼ teaspoon baking soda to a medium, heavy-bottomed pot. Bring to a boil over medium heat, then reduce to medium-low.
Cook, stirring occasionally, until the mixture reaches 235-240 degrees Fahrenheit (soft ball stage) and remove from the heat.
Stir in ¼ cup unsalted butter, 1 ½ teaspoon vanilla extract, and 2 dashes salt until combined. Stir in 2 cups toasted pecans and continue to stir for 2-3 minutes or until the mixture begins to thicken.
Carefully drop heaping tablespoon sized scoops onto the prepared baking sheet and let sit until cooled.
