Cut about ¼-½ inch off the tops of 2 heads of garlic and place in a small foil-lined pan.
Drizzle generously with olive oil and season with salt and pepper to taste. Wrap it tightly in the foil, then place it in the oven.
Roast for 60-90 minutes or until the garlic is golden brown and very soft. Remove from the oven and set aside to cool.
Sauce
Once the garlic is cooled, squeeze the softened cloves into a small bowl until you have ⅓ cup roasted garlic,.
Add 1 cup mayonnaise, 1 teaspoon dijon mustard, and ½ teaspoon Worcestershire sauce to the bowl and mix until thoroughly combined. Season with salt and pepper to taste.
Serve immediately or cover and chill in the refrigerator until you are ready to use it.
