Preheat the oven to 375 degrees Fahrenheit and spray a 4-quart baking dish with pan spray.
Pat 3 pounds chicken breast, dry with paper towels and lay them in the baking dish. Season lightly with salt and pepper.
In a large bowl, beat the 8 ounces cream cheese,½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon cumin, ½ teaspoon salt, ¼ teaspoon ground black pepper, 1 (4-ounce) can diced green chiles, and ½ cup green enchilada sauce until smooth.
Spread the cream cheese mixture over the chicken breasts and top with the shredded 1 ¼ cup colby jack cheese,.
Bake for 30-35 minutes, until the center of the chicken reaches 365 degrees Fahrenheit on a thermometer and the cheese is melted and bubbly.
Let the dish rest for 5-10 minutes before serving. Serve with rice and toppings as desired.
