Green Chile Chicken
Green Chile Chicken is bound to become your family's new favorite dinner! Tender, juicy chicken breasts are coated in a seasoned mix of green chiles, green enchilada sauce and shredded cheese. Baked until melty, flavorful and oh-so-delicious!

Ingredients
- 3 pounds chicken breast, 3-4 breasts
- 8 ounces cream cheese, room temperature
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 4-ounce can diced green chiles
- ½ cup green enchilada sauce
- 1 ¼ cup colby jack cheese, shredded
Instructions
- Preheat the oven to 375 degrees Fahrenheit and spray a 4-quart baking dish with pan spray.
- Pat the chicken breasts dry with paper towels and lay them in the baking dish. Season lightly with salt and pepper.
- In a large bowl, beat the cream cheese, garlic powder, onion powder, cumin, salt, pepper, green chilies, and enchilada sauce until smooth.
- Spread the cream cheese mixture over the chicken breasts and top with the shredded cheese.
- Bake for 30-35 minutes, until the center of the chicken reaches 365 degrees Fahrenheit on a thermometer and the cheese is melted and bubbly.
- Let the dish rest for 5-10 minutes before serving. Serve with rice and toppings as desired.
