This delicious Chicken Chow Mein is perfect for a quick and easy weeknight meal that your entire family will love! It's made with fresh veggies, noodles, and sautéed chicken, tossed in a simple chow mein sauce.
Prepare 1 pound chow mein noodles, according to package instructions.
In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1/4 cup chicken broth, 2 teaspoons sesame oil, 2 tablespoons oyster sauce, 2 teaspoons freshly grated ginger,2 tablespoons light brown sugar, and 1 tablespoon cornstarch.
Heat 1 tablespoon sesame oil, in a large pan or wok on high heat. Add the sliced 1 pound boneless skinless chicken breasts, and stir fry until just cooked through. Add 1 clove garlic, and cook for 30 more seconds.
Add 2 cups coleslaw mix and stir fry for 1-2 minutes or until cabbage has wilted.
Add the noodles and sauce and cook for 1-2 minutes until the sauce has thickened.
Garnish with green onions, and enjoy!
