Lightly grease a 9x13-inch baking dish with non-stick spray and preheat the oven to 350 degrees Fahrenheit.
Layer 14 cooked and sliced sausage1 finely diced bell pepper, 1 cup finely chopped fresh spinach, ¼ cup sliced green onions, and 1 ½ cups shredded cheddar cheese in the baking dish.
In a large bowl, whisk together 10 eggs, 1 cup milk, 1 teaspoon salt, ½ teaspoon dried parsley, and ¼ teaspoon black pepper. Pour the mixture over the vegetables in the baking dish.
Top the eggs and vegetables with rows of 65-70 tater tots to cover the dish and sprinkle with ¼ teaspoon seasoning salt. Bake for 40-45 minutes until the eggs are completely set and tots are golden.
