Garlic Mushroom Noodles is an easy side that goes well with grilled chicken, pork chops or asian mains. Silky smooth egg noodles are tossed in a quick sauce with sauteed mushrooms and lots of golden garlic!
Boil 6 ounces uncooked egg noodles according to package directions. Once cooked, drain, rinse with cold water, and set aside.
Whisk together 3 tablespoons soy sauce, ½ teaspoon chili flakes, 1 tablespoon rice vinegar, 2 tablespoons sweet chili sauce, and 1 tablespoon toasted sesame oil in a small bowl and set aside.
Heat a wok on high heat. Add 2 tablespoons vegetable oil and 8 cloves finely chopped garlic. Stir fry the garlic until they are golden brown.
Add 2 cups halved button mushrooms and cook for two minutes.
Add the cooked noodles, along with the sauce and toss well until combined.
Sprinkle with ½ cup finely chopped scallions and serve hot.
