For the dressing:

  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Sugar
  • 3/4 teaspoon Salt
  • 1/2 teaspoon ground Black Pepper
  • 1/2 teaspoon Chilli Flakes
  • 1/2 cup chopped Basil loosely packed
  • 1/4 cup chopped Parsley loosely packed

For the salad:

  • 4 cups Cherry or Grape Tomatoes halved
  • 2 Cucumbers sliced
  • 1 large Red Onion sliced
  • Salad Dressing


  1. Whisk together all the ingredients for salad dressing. Check for seasoning. Salad dressings should be on the saltier side so that when they are added to the veggies, the flavours balance themselves.
  2. Add all the veggies to a large bowl, and toss well with the salad dressing. Refrigerate for at least an hour before serving. Mix again right before serving.
