This Banana Cake with Cream Cheese Frosting is light and fluffy with just the right amount of silky smooth frosting on top. If you have ripe bananas, this is the way to eat them up!
Preheat oven to 350 degrees Fahrenheit and spray a 9x13 inch metal baking pan with pan spray, a spray with flour is best.
Add ½ cup unsalted butter to a small saucepan and melt over medium heat for 5-8 minutes until brown and fragrant. Remove from the heat and let the butter cool to room temperature.
Add the browned butter, 1 cup granulated sugar, and ½ cup brown sugar, to a large bowl and beat with an electric mixer or stand mixer fitted with the paddle attachment until combined. Mix in 2 large eggs, and 1 tablespoon vanilla extract, followed by 1 cup sour cream and 1 1/2 cups mashed bananas. Scrape down the sides and bottom of the bowl to ensure everything is thoroughly combined.
Add 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt and mix until combined. Pour the batter into the prepared baking pan and spread it evenly. Bake for 33-35 minutes or until the toothpick comes out clean when inserted in the middle of the cake.
Let the cake cool completely before frosting.
Frosting
Beat ½ cup unsalted butter, and 4 ounces cream cheese, together until smooth. Add 2 teaspoons vanilla bean paste, 2 tablespoons milk, 2 ½ cups powdered sugar , and ¼ teaspoon salt and mix until combined and smooth. Spread over the top of the cooled cake. If desired, add fresh banana slices for topping, and serve.
