Creamy Pork Carnitas Pasta has crazy tender seasoned pork with peppers and creamy pasta. All of the flavors you love about carnitas packed into a delicious meal!
Prepare 1 package Smithfield Boneless Pork Shoulder Seasoned Carnitas according to package directions. Set aside. Bring water in a large pot to a boil and cook 8 ounces penne pasta until al dente.
In a medium-sized skillet over medium-high heat add 1 tablespoon olive oil. Add 1 sliced red bell pepper, 1 sliced green bell pepper, and cook 2-3 minutes or until tender. Set aside on a plate.
Add 2 cups heavy cream, ½ cup sour cream, ¼ cup parmesan cheese, 1 teaspoon chili powder, ¼ teaspoon cumin, and ¼ teaspoon paprika to the skillet. Whisk and let simmer until it starts to thicken. Add pork and peppers to the sauce and toss until coated and heated through.
Serve with chopped cilantro , avocado , and diced tomatoes if desired.
