  • 1 gallon warm water
  • 1 cup salt
  • 1 orange sliced
  • 1 medium sized onion quartered
  • 1 lemon sliced
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 3 tablespoons peppercorn
  • 1 turkey

  1. Place the turkey in a large pot. In a large bowl add the warm water and salt. Stir to dissolve. Pour the water over the turkey and add the orange, onion, lemon, rosemary, thyme, and peppercorn. Add more water if needed to make sure that the turkey is fully submersed.
  2. Cover the pot and place into the fridge for 1-3 days. Before you roast the turkey, place it on a rack and pat to dry with a paper towel.
  3. Follow my turkey recipe for instructions on how to cook the turkey.
