Apple Pomegranate Almond Salad with a Creamy Lemon Poppyseed Dressing

Ingredients
  

  • 6 ounces spring greens
  • 1 cup sliced almonds
  • 2 Apples of choice chopped (I used ambrosia)
  • ½ cup crumbled Feta Cheese
  • ¾ cup pomegranate seeds

Creamy Lemon Poppyseed Dressing:

  • ⅓ cup mayonnaise
  • ¼ cup 2% milk
  • 3 Tablespoons Sugar
  • 4 teaspoons cider vinegar
  • 1 Tablespoon Lemon Juice
  • 2 teaspoons poppyseeds

Instructions
 

  • In a large bowl, toss spring greens, almonds, apples, feta cheese, and pomegranate.
  • In a small bowl, whisk together the mayonnaise, milk, sugar, cider vinegar, lemon, and poppyseeds. Pour over the salad and toss to coat.
  • Serve salad immediately and garnish with more feta cheese if desired.
