Heat a large 12 or 14-inch skillet over medium-high heat and add 1 tablespoon olive oil. Season 4 mahi mahi fish filets with salt and ground black pepper, then add them to the skillet and cook for 4-5 minutes on each side, until golden in color and it reaches an internal temperature of 145 degrees Fahrenheit.
Remove the fish from the skillet and set it aside on a plate.
Brown Butter Lime Sauce
Add 6 tablespoons unsalted butter to the skillet and heat over medium-low heat. Swirl the butter around occasionally until it has become light brown and gives off a nutty fragrance.
Turn off the heat and whisk in3 tablespoons fresh lime juice, 1 teaspoons honey, 1 teaspoon minced garlic, ½ teaspoon salt, and ½ teaspoon ground black pepper.
Add the fish back to the skillet and coat the filets in the sauce. Heat over medium-low heat until warmed through.
Avocado Salsa
Add 1 large diced avocado , 1 diced Roma tomato , ¼ cup diced red onion , ½ cup corn, 1 tablespoon fresh lime juice, 1 tablespoon finely chopped fresh cilantro, and ⅛ teaspoons salt to a medium bowl and stir to combine.
Top the mahi mahi with the avocado salsa and serve immediately.
