Whisk together 1 tablespoon olive oil, 1 tablespoon melted salted butter, 2 teaspoons minced garlic , ¼ cup balsamic vinegar, 1 tablespoon soy sauce, 1 tablespoon honey, salt, and ground black pepper in a small bowl.
Prepare the 4 large portobello mushrooms by gently removing the stems from the mushrooms and washing them carefully. Use a spoon to scrape out the gills. Place the mushrooms in a 9 x 13 x 1 or 2-inch pan and top with the marinade. Let the mushrooms marinate for 10 minutes.
Place the mushrooms on the grill and cook on each side for 5 minutes. Remove them from the grill and serve them on 4 hamburger buns, topping them with your favorite burger toppings.
