Wrap 2 cups finely grated cucumber in cheesecloth or a couple paper towels and squeeze it well to get rid of the excess moisture.
In a medium bowl, combine the squeezed cucumber, 2 cups plain greek yogurt, 2 ½ teaspoons minced garlic , 1 tablespoon white wine vinegar, 1 teaspoon dried dill, 1 teaspoon dried oregano, and 2 tablespoons fresh lemon juice. Add salt and ground black pepper to taste.
Drizzle 1 tablespoon extra virgin olive oil on top. Cover and chill in the refrigerator fo 30 minutes to let the flavors blend. Serve with fresh vegetables and pita bread.
