Add 2 Tablespoons Oil and sliced 2 large onions to a large skillet over medium-high heat. Sauté until caramelized to a deep golden brown, about 7-10 minutes. Remove onions and set aside on a plate.
Add 4 chicken breasts and cook on each side for 3-4 minutes or until cooked throughout and no longer pink. Set aside with the onions.
Melt 2 Tablespoons butter in your skillet, then add 2 Tablespoons flour and stir until combined. Add 2 cups beef broth, 1 teaspoon dried oregano, 1 teaspoon dried thyme, and salt and pepper to taste, and let simmer for 1-2 minutes until it starts to thicken.
Reduce the heat to a simmer, and add the chicken and onion gravy back to the dish. Top with 1 cup Swiss cheese shredded and 8 slices provolone cheese.
Place dish in oven and broil for 1-2 minutes or until cheese is melted.
