2poundscored and chopped Roma tomatoes
½cuppacked brown sugar
2tablespoonapple cider vinegar
1tablespoonlemon juice
½chopped onion
1minced garlic clove
½teaspoonground cinnamon
¼teaspoonground cumin
1teaspoonkosher salt
Instructions
To a large stock pot, add the 2 pounds cored and chopped Roma tomatoes, ½ cup packed brown sugar, 2 tablespoon apple cider vinegar, 1 tablespoon lemon juice, ½ chopped onion, 1 minced garlic clove, ½ teaspoon ground cinnamon , ¼ teaspoon ground cumin, and 1 teaspoon kosher salt.
Heat over medium-high and cook until the tomatoes start to break down, about 10 minutes. Stir occasionally.
Once the tomatoes come to a boil, reduce the heat to low, and simmer for another one and a half to two hours, stirring occasionally, until no liquid remains and the texture is jam-like.
Season to taste with salt and pepper. Cool completely and store in an airtight container.
