Ingredients
1(15 ounce) canblack beans, drained and rinsed
1(15 ounce) canblack eyed peas, drained and rinsed
1/2 red oniondiced
1cupcorn
1avocadodiced
2roma tomatoesdiced
1/4cupcilantrochopped
1jalapeño,seeded and finely chopped
1/4cupolive oil
juice of one lime
1/2teaspooncumin
1/2teaspoonchili powder
salt and pepper to taste
Instructions
In a medium sized bowl combine black beans, black eyed peas, onion, avocado, tomatoes, cilantro, jalapeño, olive oil, lime juice, cumin, and chili powder. Toss until combined and coated. Salt and pepper to taste.
