These slow cooker honey garlic pork chops are incredibly tender, they practically melt in your mouth! Cooked in a sweet and savory sauce, you won't be able to stop after one bite. This is the perfect weeknight dinner that's both easy and unbelievably delicious!
Season 4 boneless pork chops, generously with Kosher salt and pepper on both sides.
Heat 1 tablespoon olive oil in a pan over high heat. Cook the pork for 4-5 minutes on each side until deep golden brown.
Place the pork chops in the bottom of the slow cooker.
In a medium bowl, whisk together 2 teaspoons minced garlic, 1/2 cup honey, 1/4 cup chicken broth, and 3 tablespoons apple cider vinegar. Pour the sauce over the pork chops.
Cover the slow cooker and cook on low for 4 hours. I prefer cooking pork chops on low, but feel free to cook on high for 2-3 hours.
In a small bowl, whisk 2 tablespoons cornstarch and cold 2 tablespoons water. Add the cornstarch mixture to the slow cooker for the last 30 minutes of cooking. Cook until the sauce thickens and the pork chops are tender.
Sprinkle with 2 tablespoons chopped parsley and serve over potatoes.
