Brunswick stew combines sizzling onions, garlic, BBQ sauce, and tender pulled pork all in one pot! Add a bit of cayenne for some zing and sweet corn and lima beans for texture. This combination of ingredients is so hearty and makes the best fall meal!
Heat ¼ cup butter in a large pot over medium-high heat. Saute ½ medium yellow onion in the butter until they are tender, about 5 minutes. Add 4 cloves garlic and saute for another 2 minutes.
Add 1 can fire-roasted tomatoes, 3 cups chicken stock, 3 tablespoons tomato paste, 2 cups barbecue sauce, 2 tablespoons Worcestershire sauce, 1 can sweet corn, 1 can lima beans, ¼ teaspoon cayenne pepper, ½ teaspoon salt, ½ teaspoon pepper, and 2 cups smoked pulled pork to the pot.
Stir everything together until well incorporated. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about an hour.
Remove the stew from the heat and serve fresh with additional BBQ sauce drizzled over the top.
