Heat a large, heavy bottom pot over medium-high heat. Add 1 pound Italian sausage and ½ yellow onion, and saute until the sausage is cooked through.
Add in 3 cloves garlic,1 tablespoon Italian seasoning, 1 tablespoon fresh parsley, and 1 teaspoon red pepper flakes, and saute for just another minute until the garlic becomes fragrant.
Quarter the 1 pound petite yellow potatoes and add them to the pot along with the 3 cups chicken broth, 2 carrots, and salt and pepper to taste.
Bring everything to a boil, then reduce the heat to low. Cover and simmer until the potatoes are fork-tender, about 15 minutes.
Add 2 cups heavy cream and ½ cup parmesan cheese, to the pot and stir. Cook for about 5 minutes. Remove the soup from the heat and serve fresh!
