Triple chocolate peppermint cookies are soft and chewy cookies that get drizzled with white and dark chocolate. They are topped with crushed candy canes and are the perfect treat for the holidays!
Preheat the oven to 350 degrees Fahrenheit. In a medium-sized mixing bowl cream the butter and sugar until light and fluffy. Add the egg and peppermint extract and mix until incorporated.
Whisk the flour, cocoa, baking soda, and salt in another bowl. Slowly add to the butter mixture.
Shape the dough into 2-inch balls and place on an ungreased baking sheet. Slightly flatten the tops of the balls into 2-inch rounds with the bottom of a glass.
Bake for 8-10 minutes or until set. Do not overbake! Let the cookies cool for 10 minutes on the pans before transferring to a wire rack.
Add the white chocolate in a microwave-safe bowl. Heat in the microwave in 30-second increments, stirring in between, until melted. Drizzle over the cookies. Repeat for the semisweet chocolate and drizzle. Top with crushed candy canes and let set.
