Grilled Steak Fajita Skewers with Avocado Chimichurri are perfectly seasoned tender and juicy steak skewers with bell peppers. The Avocado Chimichurri is the perfect dipping sauce to these skewers making the best summer meal!

Ingredients
2poundstop sirloin steakcut into 1 inch cubes
1tablespoonchili powder
¼teaspoongarlic powder
¼teaspoononion powder
¼teaspoondried oregano
½teaspoonpaprika
1½teaspoonsground cumin
1teaspoonsalt
1teaspoonblack pepper
2Tablespoonsolive oil
1red bell peppercut into 1 inch cubes
1yellow bell peppercut into 1 inch cubes
1green bell peppercut into 1 inch cubes
1/2red onioncut into 1 inch cubes
Avocado Chimichurri:
1/3cupolive oil
1Avocado
3garlic cloves
1/2cupparsleychopped
1/2cupcilantrochopped
1teaspoonsalt
1/4teaspoonpepper
juice of 1 lime
Instructions
In a medium sized bowl add steak, chili powder, garlic powder, onion powder, oregano, paprika, cumin, salt and pepper and toss until coated evenly in spices. Add olive oil and toss.
Thread the steak with the peppers on skewers.
Grill for 8-10 minutes until the meat is done to desired liking. Remove from the grill and serve with avocado chimichurri.
To make the avocado chimichurri: In a blender or food processor, add the olive oil, avocado, garlic, parsley, cilantro, salt, pepper and lime. Blend until smooth.
