These waffles are made simple by using a mix. They are coated in loads of cinnamon-sugar and ready to eat in minutes. These churro waffles make the perfect last-minute breakfast and are sure to be a hit.
Preheat your waffle iron, and spray it with non-stick cooking spray.
In a medium-sized bowl, combine the 2 ½ cups buttermilk pancake mix, 1 ¼ cups cold water and 2 tablespoons vegetable oil. Stir until combined.
Pour the batter into the preheated waffle iron and cook 4 full-size waffles.
Cut each waffle into the 4 segments created by the waffle iron.
Melt the ½ cup butter in a shallow bowl. Combine the ½ cup granulated sugar and 1 ½ teaspoons cinnamon in another bowl.
Dip each segment into the butter. Shake off the excess, and then dip both sides of the buttered waffle into the cinnamon-sugar mixture. Shake off the excess.
Garnish with whipped cream, strawberries, and syrup, if desired.
