Preheat oven to 350 degrees Fahrenheit. Spray an 8x8-inch baking dish with cooking spray
In a large mixing bowl, 3 cups quick oats, ¾ cup brown sugar, 2 teaspoons cinnamon, 2 teaspoons baking powder, and 1 teaspoon salt together. Whisk in 1 cup milk, ½ cup melted butter, ¼ cup maple syrup, 2 eggs, and 2 teaspoons vanilla extract.
Spread the mixture into the prepared baking dish. Bake in the preheated oven until bubbling, about 35- 40 minutes.
Cream cheese glaze: Whisk together the 4 tablespoons melted unsalted butter, 2 ounces room temperature cream cheese, ¾ cup powdered sugar, and ½ teaspoon vanilla extract. Drizzle over the baked oatmeal. Serve warm and garnish with ¼ cup chopped pecans, if desired.
