Almond Thumbprint Cookies with a Salted Caramel Center
Almond Thumbprint Cookies are light, buttery, almond flavored shortbread cookies that just melt in your mouth. They get filled with Salted Caramel and topped with slivered almonds. These cookies will blow you away!

In a medium-sized mixing bowl combine 1 cup unsalted softened butter, 1 cup granulated sugar, and 1-2 teaspoons almond extract. Beat at medium speed until creamy, scraping the bowl often.
Add 3 cups all-purpose flour and continue mixing until incorporated. Cover and refrigerate at least 1 hour or until firm.
Preheat the oven to 375 degrees Fahrenheit. Shape the dough into 1-inch balls and place them 2 inches apart onto an ungreased cookie sheet. Make an indentation in the center of each cookie with back of a teaspoon.
Bake for 8-10 minutes or until edges are lightly browned. Let cool completely.
In a microwave-safe bowl add 15 ounces caramels: store-bought or homemade soft, ¼ cup heavy creamcream, and ½ teaspoon sea salt. Melt the caramel mixture, stirring every 30 seconds until fully melted and smooth.
Fill each center of cookie with 1 teaspoon of the salted caramel.
Garnish with flakey salt and slivered almonds for topping and enjoy!
