Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray. Set aside.
Using a hand mixer or a stand mixer, beat together the 2 (8-ounce) packages cream cheese, 1 teaspoon vanilla, slightly beaten 1 egg, and ½ cup sugar until smooth.
In a small bowl, mix together the remaining ½ cup sugar and 2 tablespoons cinnamon. Set aside.
Sprinkle ¼ cup of the cinnamon and sugar mixture evenly into the bottom of the prepared pan.
Roll out 1 tube refrigerated crescent rolls and press it into the prepared pan. Pinch the seams together so the dough is completely sealed. Place the dough on top of the cinnamon and sugar mixture in the pan.
Spread the cheesecake mixture evenly on top of the dough. Spread 1 (20-ounce) apple fruit filling and topping on top of the cheesecake mixture.
Unroll the remaining tube of crescent dough and place it on top of the apple filling layer also making sure that the seams are completely sealed.
Sprinkle the top with the remaining ¼ cup of cinnamon and sugar mixture and bake for 30-35 minutes or until golden brown.
