Preheat the oven to 450 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with nonstick cooking spray.
Add 2 cups long-grain white rice, 1 tablespoon sesame oil, ½ cup chopped white onion, 2 cloves minced garlic, 1 cup frozen peas and carrots, 3 tablespoons soy sauce, 1 cup diced cooked ham, and 3 cups chicken broth to the prepared baking dish. Stir until well combined.
Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 45 minutes.
Remove the foil and increase the oven temperature to 475 degrees Fahrenheit. Make a well in the middle of the rice and pour in 2 large beaten eggs. Place the rice back in the oven for 10 minutes. Cook until the rice gets golden brown.
Using a wooden spoon, break up the cooked egg and gently mix it into the rice. Season with salt and pepper to taste, and garnish with ¼ cup sliced green onions.

Store and Reheat Leftovers
In the Refrigerator: Stored in an airtight container, it stays fresh for 5–7 days in the fridge.
To Reheat: The microwave works best! Heat portions of the rice for 1-2 minutes.
In the Freezer: Store in an airtight container in the freezer for up to 3 months. I like to freeze it in serving sizes so it’s easier to heat just the right portion.
