In a medium-sized skillet over medium-high heat, add the 1 tablespoon olive oil and 1 pound cubed chicken thighs,and cook until brown and no longer pink.
In a small bowl, whisk together ¼ cup bourbon*, ½ cup soy sauce, ¼ cup brown sugar, and 3 minced garlic cloves. Whisk together 1 teaspoon cornstarch and 1 tablespoon water and add to the sauce mixture.
Pour the sauce over the chicken and simmer for 3-4 minutes until the sauce thickens up. Serve over rice and garnish with sliced green onions if desired.
