Cook 8 ounces spaghetti noodles according to package directions until al dente.
While the noodles are cooking, melt ½ cup butter in a saucepan over medium heat. The butter will slowly start to foam and then turn to a brown color. This process only takes about 5 minutes and the turn happens quickly.
Drain the pasta but do not rinse it. Place the pasta in a serving bowl.
Pour the browned butter over the pasta. Sprinkle with ½ cup grated mizithra cheese and toss to coat.
Sprinkle with chopped parsley for garnish, if desired.
