In a large skillet over medium-high heat, add 3 tablespoons butter and heat until melted. Stir in 4 cloves minced garlic, ¼ cup freshly chopped oregano, 1 teaspoon fresh chopped rosemary, and 1 teaspoon fresh chopped thyme. Cook for 1 minute until fragrant.
Add 1 pound boneless skinless chicken thighs and cook for 7-8 minutes on each side or until the chicken is no longer pink and the internal temperature reaches 165 degrees Fahrenheit. Remove chicken and set aside on plate.
Add 2 medium sliced zucchini to the same skillet and season with salt and pepper to taste. Cook for 3-5 minutes or until tender.
Add the cooked chicken back to the skillet and serve!
