Cafe Rio {Copycat} Black Beans and Homemade Tortilla Strips
I loved the flavor of these black beans and it was easy to throw everything together!

Ingredients

olive oil

minced, about 2 teaspoons

can black beans,
rinsed and drained
1 ⅓
cups
tomato juice
½
teaspoon
salt

tablespoons
fresh chopped cilantro
Ingredients for Tortilla Strips
10-12
corn tortillas
oil for frying
Kosher salt,
to taste
Instructions
Black Beans
Heat the olive oil in a skillet over medium-high heat, add in the garlic and cumin and cook for just a minute, until it is fragrant.
To the skillet add the beans, tomato juice, and salt. cook everything together, stirring continually, until it is all heated through.
Top with cilantro to serve.
Tortilla Strips
Heat the frying oil in a large frying pan over medium-high heat. Using a pizza cutter, cut the tortillas into ½ by 2-inch strips and set aside.
carefully drop the cut tortilla strips into the hot oil and fry them until thye are crispy and golden brown.
Remove the fried tortilla strips from the hot oil with a slotted spoon, place them on a paper towel lined plate and season with salt.
