Instructions
Cheesecake Bars
Preheat the oven to 350 degrees Fahrenheit. Line a 13 x 9 x 2-inch baking dish with parchment paper and lightly spray with nonstick cooking spray.
In a medium sized bowl, combine 2 cups all-purpose flour and ½ cup firmly packed light brown sugar. Cut in 1 cup unsalted softened butter using a pastry cutter until the mixture is crumbly.
Press the crust into the bottom of the prepared pan. Bake for 15 minutes or until lightly browned.
In a large mixing bowl, combine 2 (8-ounce) packages softened cream cheese and ½ cup granulated sugar. Mix using a hand mixer on medium speed until smooth and creamy. Add 2 large eggs one at a time and mix until combined. Stir in 1 teaspoon vanilla extract and pour the batter over the crust.
Apple Mixture
Add a large bowl add 3 medium chopped Granny Smith apples. Stir in ½ teaspoon ground cinnamon, 2 tablespoons granulated sugar, and ¼ teaspoon ground nutmeg. Spoon evenly on top of the cheesecake layer.
Streusel Topping
In a medium-sized bowl, add 1 cup firmly packed brown sugar, 1 cup all-purpose flour, ½ cup quick cooking oats, and ½ cup unsalted softened butter. Mix until crumbly and sprinkle the streusel topping over the apple layer.
Bake for 30 minutes until filling is set. Allow to cool and drizzle with ½ cup caramel topping.
