Add 1 pound ground beef to a medium skillet or cast iron pan and cook over medium heat until cooked through and no pink remains. Drain the fat except for 1 tablespoon and remove the beef from the pan.
Add ½ cup diced onion, to the pan and stir into the remaining beef fat. Cook for 3-4 minutes over medium heat until the onions are tender and translucent. Add the cooked beef, 1 (14.5-ounce) can petite diced tomatoes, and 4 teaspoons dill relish to the onions. Stir to combine and cook for about 2 minutes, until heated through.
Cut ½ pound velveeta cheese and 4 ounces cream cheese into cubes and add to the pan. Cook and stir until all the cheese has melted. Taste and season with salt and ground black pepper as needed.
Transfer to a serving dish and top with shredded lettuce, caramelized grilled onions, and diced cherry tomatoes. Serve with bread or crackers.

Crockpot Instructions: Complete step 1 before adding the cooked and drained beef, onions, diced tomatoes, relish, Velveeta, and cream cheese to a 4-quart crockpot. Cover and cook on low for 2-3 hours, stirring occasionally until everything is heated through and melted. Before serving taste and season with salt and pepper.
