Rub the chicken pieces with 1 tablespoon of taco seasoning. Add the olive oil and seasoned chicken to a large skillet. Cook over medium-high heat until cooked throughout. Remove and set aside on a plate and cover with aluminum foil.
Returning to the same skillet, add the rice, chicken broth, black beans, tomatoes, corn, and remaining taco seasoning. Bring the mixture to a boil, reduce heat, and cover for 20-25 minutes until all of the liquid is absorbed.
Add the chicken back to the pan and cover with a lid until the chicken is heated through to 165 degrees Fahrenheit.
Top with cheddar cheese and heat until melted. You can also place the skillet in the oven to broil for a minute to melt the cheese! Top with optional toppings and enjoy!
