In a large pot of boiling water, add 1 ½ pounds Brussels sprouts and blanch for 7 minutes. Add them to an ice bath to stop the cooking process. Drain and set aside.
In a medium saucepan, add 6 slices diced bacon and cook for 4-5 minutes or until crisp. Remove and set aside on a paper towel-lined plate.
Preheat oven to 350 degrees Fahrenheit. Add the Brussels sprouts to the bottom of a 9 x 13-inch pan or large skillet.
In a small saucepan, add 2 tablespoons butter, 2 tablespoons all-purpose flour, 1 teaspoon salt, and ½ teaspoon freshly ground black pepper. Whisk in 2 cups whipping cream and ½ cup grated Parmesan cheese until it starts to thicken. Pour over the Brussels sprouts and top with bacon and 1 cup shredded mozzarella cheese. Bake for 20-25 minutes or until golden and bubbly.
