2cupsold fashioned rolled oats
1cupall-purpose flour
½teaspoonground cinnamon
1teaspoonvanilla extract
⅛teaspoonsalt
⅔cuphoney
3tablespoonscoconut oilroom temperature

1 ¼cupsVanilla Greek yogurtfull fat or a thicker yogurt works best

⅓cupmandarin orange slices
1peeled and sliced medium kiwi

Instructions
Preheat oven to 350 degrees Fahrenheit. Grease a 10 inch spring form cake pan and set aside.
In a large bowl combine 2 cups old fashioned rolled oats, 1 cup all-purpose flour, ½ teaspoon ground cinnamon, 1 teaspoon vanilla extract, and ⅛ teaspoon salt together. Add ⅔ cup honey, 3 tablespoons coconut oil, and mix until a dough forms.
Spread the mixture into prepared pan and press down firmly with a spatula or the bottom of a glass cup. Bake in preheated oven for 10 minutes. Remove from oven and allow to cool completely.
Combine 1 ¼ cups Vanilla Greek yogurt with 2 tablespoons honey. With an offset spatula, spread yogurt evenly on top of of cooled crust.
Decorate with ½ cup blackberries, ½ cup raspberries, ⅓ cup mandarin orange slices, 1 peeled and sliced medium kiwi, 2 sliced strawberries and ⅓ cup blueberries. Enjoy immediately or place in the fridge for up to an hour to cool and set.
