1poundboneless skinless chicken breast or thighcut into bite-sized
¾cupchicken broth
1teaspooncornstarch
3cupsbroccoli florets
1cupcashews
Instructions
Make the sauce in a small bowl by whisking together ¼ cup soy sauce, 3 teaspoons minced garlic , 3 tablespoons brown sugar, and 1 teaspoon sesame oil.
Heat a large skillet over high heat, then add 1 pound boneless skinless chicken breast or thigh and pour the sauce on top. Cook for about 5 minutes or until the chicken is no longer pink and reaches an internal temperature of 165 degrees Fahrenheit.
Take ¼ cup of the ¾ cup chicken broth and mix it in a small bowl with 1 teaspoon cornstarch until the cornstarch has dissolved. Add the remaining chicken broth and 3 cups broccoli florets to the skillet with the chicken mixture. Cover and cook until the broccoli is tender, about 3-5 minutes.
Add in the cornstarch mixture and cook over medium-low heat for a few more minutes until the sauce thickens. Stir in 1 cup cashews before serving over rice and garnish with green onions.
