Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
In a large bowl cream together ¾ cup butter, ½ granulated sugar, and½ cup packed brown sugar until light and fluffy. Beat in 1 egg and ½ cup real maple syrup.
In a separate bowl, whisk together 3 ¼ cups flour, 1 teaspoon baking soda, ½ teaspoon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon salt, ¼ teaspoon cream of tartar, and ¼ teaspoon ground nutmeg. Slowly beat the flour mixture into the butter mixture.
In a small bowl combine ½ cup granulated sugar and 1 teaspoon cinnamon for the coating.
Scoop the dough into 1 ½ inch balls then roll in the cinnamon sugar coating. Place 3 inches apart on the prepared baking sheet.
Bake for 10-12 minutes or until lightly brown. Transfer the cookies to a cooling rack to cool before enjoying!
