In a medium-sized saucepan over medium-high heat, add 2 tablespoons olive oil, 2 minced garlic cloves, and ½ finely diced white onion. Cook until tender.
Add 3 (15-ounce) cans pinto beans, 2 teaspoons cumin, 1 teaspoon chili powder, juice of half a lime, and salt to taste. Heat until warm.
Remove from the stove and mash the beans until they reach the desired consistency. Top with cilantro and cotija cheese if desired.
